Pina Colada Bread

This is by far my favorite bread. The recipe is an adaptation of one that I've had for years. It started out as Cinnamon Apple Raisin Bread and got butchered into its many current forms.

Here is the recipe, I hope you enjoy it as much as I do!

Pina Colada Bread

  • 1 1/2 C All Purpose Flour
  • 3/4 C Sugar
  • 1 tsp Baking Soda
  • 1/8 tsp Salt
  • 1 C Diced Pineapple, drained
  • 1/2 C Flaked Coconut
  • 2 Eggs
  • 2 Tbsp Bacardi Gold Rum (or Rum extract)
  • 1 tsp Coconut Extract
  • 1/8 C Vegetable Oil

Step 1

Combine all the dry ingredients in a large bowl. Mix well.

Step 2.

Stir in Coconut and Pineapple.

Step 3.

Add remaining ingredients, stirring after each addition.

First the Eggs.

Then the rum and coconut extract. Then the oil. I always add this last so that I can adjust the moisture if needed. If your dough is looking pretty damp already you can reduce this a little bit.

You should end up with something that looks like this:

Step 4.

Spray a loaf pan with some nonstick spray and dump your dough into it.

Step 5.

Bake at 350F for 50 minutes or until a toothpick comes out clean.

When your bread is done, it should look like this...

And this...

And this...

And it should taste just as good.
